Blue Cheese Chicken Salad

300g Lettuce

60g blue cheese

2 sweet corns

5 Quail eggs

10 cherry tomatoes

2 Grilled chicken breasts

3 tbsp whole grain mustard

1/2 cup mayo



  1. Bring two pots of water to a boil; add corn to the first and quail eggs to the second

  2. Chop your lettuce and put it in a sieve and add a few ice cubes to keep it fresh

  3. Take your quail eggs out after three minutes and put in a bowl of cold water for another three minutes then peel and halve

  4. Halve cherry tomatoes and dice the blue cheese

  5. Take your sweetcorn out once done and put in a bowl of cold water to cool. Shuck it

  6. Cut your grilled chicken breast into cubes

  7. In a bowl, combine your mustard with your mayo

  8. In a salad bowl, add all your vegetables, grilled chicken, eggs, top with blue cheese and toss

  9. Serve with mustard mayo
