Roasted Tomato Sauce



2 hours


600g cherry tomatoes, halved

1/2 medium onion, chopped

3 cloves garlic

1 sprig of Basil

1 sprig of rosemary

1 sprig of thyme

1/4 scotch bonnet

2 tbsp olive oil

1 tsp salt

1/2 tsp black pepper

1/4 tsp sugar



  1. Preheat the oven to 180C fan

  2. Add tomatoes, onions, garlic, basil, rosemary, thyme, and scotch bonnet to an oven dish

  3. Season with salt and black pepper and Drizzle with olive oil

  4. Roast in oven for 1 hour or until the edges of the tomatoes are slightly blistered

  5. Remove and set aside to cool

  6. Transfer to a food processor and blitz

  7. Serve over pasta
