Crispy Duck

Great for salads and sliders

4 duck legs

2 cups salt

2 cups granulated sugar

2 tsp cumin

2 tsp Black pepper

3 sprigs thyme

3 sprigs rosemary

2 tbsp minced garlic



  1. Make cure seasoning using sugar, salt, cumin, black pepper, thyme, rosemary and garlic

  2. Coat duck legs fully in cure seasoning

  3. Leave to cure for at least 4 hours covered and chilled

  4. Remove duck from cure seasoning and rinse thoroughly, pat dry

  5. Heat up some oil, and "deep fry" duck legs on low heat till golden brown and transfer to an oven rack

  6. Preheat oven at 160 degrees celsius and bake the duck legs for 10 more minutes

  7. Leave to rest for 20 minutes and serve
