Cinnamon Sugar French Toast

1 brioche, challah or agege bread
3 eggs
1 cup of heavy cream
1 tbsp vanilla bean paste
Butter
1 cup of caster sugar
2 tbsp cinnamon

method
Slice the loaf and pre heat your oven at 160°C
In a bowl, whisk the eggs, cream and vanilla bean paste
In a separate bowl, mix sugar and cinnamon
Heat a skillet up and melt butter
Dip each side (both sides) into your egg-cream mix and put it in the skillet, toast on each side till you. get a nice golden colour
After toasting each slice, dip it into the sugar-cinnamon mix and transfer to an oven rack
Put toasted slices in the oven for 5 minutes to finish
Serve warm & enjoy with maple syrup, berries, sausages or some bacon
