Olamide's Oreo Brownies

140g salted butter

300g granulated sugar

70g cocoa powder 

2tsp vanilla extract 

2 eggs 

65g all-purpose flour 

20 oreo cookies (4-6 crushed to be sprinkled on top of the brownies and the rest to be arranged in between the 2 layer of the brownie mix)

method

  1. Preheat your oven to 180 degrees c. 

  2. Smear butter or oil with a kitchen towel on the inside of the tin and then line with parchment paper 

  3. Place butter, sugar and cocoa powder in a heat proof bowl on top of a saucepan with boiling water and stir as it melts. Continue stirring until all the ingredients are combined. The mixture should be warm but not hot. 

  4. Leave to cool, then whisk your eggs and vanilla extract in. 

  5. Fold in your flour, until all is combined 

  6. Pour half of the butter into the prepared pan, and spread out evenly. Place the whole oreos flat on the first layer of batter and then top with the remaining half of the batter.

  7. Sprinkle the crushed oreos on the top

  8. Bake for 20-30 minutes

  9. Leave to cool and serve


TIP: Brownies are better slightly underdone than overcooked. Once the center of the brownie is no longer shaky/jiggly and a toothpick or knife inserted comes out almost clean, then it is ready to come out of the oven!
