Serves 5-6

30 mins

For the filling:

5 bramley apples - peeled, cored and chopped into bite size chunks

2 tbsp golden caster sugar

1 tbsp vanilla bean paste

2 tbsp of whiskey/water

For the crumble:

175g plain flour

110g golden caster sugar

110g cold butter (cut into small cubes)

A pinch of salt

1 tbsp cinammon

  1. Pre-heat the oven to 190 degrees c.

  2. In a sauce pan, stew your apples on medium heat with your golden caster sugar, vanilla paste and whiskey (or water) for about 3 minutes

  3. Transfer the stewed apples to a baking dish at least 5cm deep

  4. Put plain flour, cinammon, sugar and salt in a bowl

  5. Add your butter in and rub it in with your fingertips until the mixture looks like moist breadcrumbs

  6. Pour the crumb mix over the apples to form a pile in the centre, then use a fork to even out

  7. Gently press the surface with the back of the fork so the crumble holds together and goes crisp

  8. Set on a baking tray and put in the preheated oven for 30 minutes, until the top is golden.

  9. Leave to cool for 10 minutes before serving.
