Blueberry Muffins

310g self raising flour

200g caster sugar

1 tsp baking powder

1 egg

1 cup of blueberries

1 tsp vanilla extract

110g butter

110 ml whole milk



1. Preheat oven to 180 degrees c.

2. Melt butter and leave to cool

3. Measure the flour and baking powder in a separate bowl

4. Mix melted butter and sugar,  add the milk and vanilla and whisk the egg in

5. Make a well in the middle of the flour, pour your wet ingredients in, add the blueberries and mix with a spatula

6. Grease your muffin tray, spoon in the batter and bake for 25 minutes

7. Leave to cool and serve
